Surf & Turf Risotto

Ingredients:

Bacon lardons
half an Onion
a stick of Celery
Chilli flakes
oregano
1 garlic clove
half a sweet red pepper
risotto rice
coriander
flax seed
olive oil
stock cube
apple cider vinegar
mushrooms
prawns

fry the bacon and onions until brown in the olive oil
add the celery, chilli, oregano, garlic, pepper, mushrooms for 3 mins
then add the risotto rice until clear,
drizzle on the vinegar
add a mug and a half of stock, to make it like a broth rather than a risotto
meanwhile 'pop' the flax seed in a dry pan then tip into risotto when popped
in the last 5 mins add the prawns and the coriander.
